Creamy Tuna Casserole


I don't know about you guys, but I love tuna! And what's better than tuna AND pasta? What seems like a random combination actually makes for a great recipe! The great thing about this casserole is you can really add whatever vegetable you want, or leave them out. The majority of tuna casserole recipes have peas, but I hate peas so I added broccoli instead. Another great thing: you will have leftovers for days! Strawberry Vanilla Waffles


Breakfast is by far my favorite meal of the day! These are vanilla waffles and (to feel slightly better about myself) I added some strawberries! And, if you don't sprinkle on some powdered sugar, you're doing it all wrong. These waffles only take 15 minutes and are just as good (and probably healthier) as going to IHOP! Garlic Butter Spinach Pasta


I realized that I haven't made pasta in what seems like years, so I decided to test out a new recipe! This recipe literally has all of my favorite ingredients: garlic, spinach, and pasta. It really can't get any more delicious! And it only takes 20 minutes! I sometimes struggle with eating enough vegetables, so this is also an easy way to get some leafy greens in for the day!

Cube Steak & Garlic Parmesan Potatoes


So, I'm not sure if any of you have ever had cube steak, but it's delicious! I'm not a huge steak fan, but I could eat this every night! It could be compared to a tenderloin, but I personally think it's better because of the breading. And you can't ever go wrong with garlic potatoes as a side (I seriously put garlic on everything). 

I don't have an exact recipe on how to make a cube steak, but you will need 2-3 eggs, 1tbsp parsley, 1/4 tsp pepper, 1-2 packs of crackers (crushed), and 2tbsp olive oil. Warm up some olive oil in a skillet on medium, dip the steaks in the egg mix (egg+spices), then in the crackers, and put it on a skillet for about 30-40 minutes (flip a lot). Easy as that!

Cream Cheese & Chicken Taquitos


These taquitos were amazing! I had actually never heard of a taquito until I came across this recipe on Pinterest (recipe link here). The tortillas were crispy and the cream cheese filling really melts in your mouth. Instead of making tacos or quesadillas, try this Mexican inspired recipe!

Turkey, Bacon & Avocado Panini



I have finally strayed away from Mexican food for a little while and decided to make a panini! I'm usually not a big sandwich person, but this panini may have converted me. Instead of going to Panera or somewhere to get one, you can actually make your own delicious and nutritious panini (minus the bacon that I didn't use) right in your own kitchen! You can also switch things up a bit: if you prefer ham instead of turkey, or a different cheese - there's a bunch of combinations you can try!

Garlic Parmesan Spinach Orzo



This week I decided to make pasta (it has been a while since I have made some!). I have also been on a spinach kick, so this recipe was perfect. And because there's cheese, of course. I also had never made anything with orzo before, and let me tell you, it was delicious! The awesome thing about this recipe is there's a bunch of leftovers so you won't have to cook for the next few days!

Avocado Beef Quesadillas



I'm still having Mexican food cravings this week, so I experimented with something new. I love, love, love avocados! So I thought this type of quesadilla would be a nice balance of Mexican, without the typical ingredients like peppers, onions, etc., or other ingredients that might be spicy. I also completely overestimated on how much to make. I could barely eat half of one quesadilla because the avocados are actually really filling. This quesadilla will seriously melt in your mouth!

Cheesy Chicken Fajitas



I realized that I haven't had Mexican food in what seems like years, so I decided to make fajitas! I have to be in the mood for Mexican food, and I'm a wimp when it comes to a lot of spiciness. If you're like me, then you will love these fajitas: They're quick, easy on the spice factor, and delicious! I felt pretty healthy while eating these because of all of the veggies, and I bought whole grain tortillas instead of regular (which you can clearly see I failed at folding). Oh, and chips and salsa is a must!

20-Minute Skillet Chicken & Spinach Parmesan



Annnd I'm back to chicken this week! Surprise surprise. I have actually never experimented with a chicken recipe like this one before, so I was interested in seeing how it would turn out. Turns out, it was really good! I put a little too much spinach on mine (I love spinach, but in salad form rather than cooked) but, if you're a spinach lover, this is probably perfect for you! I also added extra cheese because there's no such thing as too much cheese :)

Beef & Broccoli Stir-Fry




This weekend I decided to try something different. I have never had stir-fry before, but have been told numerous times that I need to try it! And I'm sure glad I did! I'm not a huge ginger fan, so I didn't think I'd like the soy and ginger sauce, but it was actually delicious and pretty mild! This is something easy, yet still fairly healthy, to make during the week if you're somewhat short on time (and if you're craving Asian food!).

Rotel Dip






Cream cheese, sausage and rotel: I know, it may not sound like the most delicious combination you've ever heard of, but I promise that's worth trying! At first I was hesitate to try this dip because the thought of sausage and cream cheese grossed me out. But once I took a bite, I became addicted! This dip is perfect to make for get-togethers (I actually just made this for the Super Bowl)! All you need to do is cook Italian sausage (1 pack) in a skillet, and heat 2 packs of cream cheese in a crock pot. Once they're both heated/cooked, mix everything together (including 1 can of rotel) all in the crock pot. It's that simple! And who doesn't love cream cheese!

Cheesy Beef Stroganoff




I decided to try something that was kind of out of the norm for me: cooking with beef instead of chicken. I'll admit it, there's usually chicken in the majority of my meals (yes, I love chicken), but I decided to switch it up a little. This recipe took even less time than the previous one. Cooking the beef takes the longest, but I was still able to sit down and eat this within 20 minutes! That's pretty dang fast for a delicious meal.

Chicken Pasta Primavera


This may have been one of the best and easiest meals I've ever made! I mean, you really can't beat a delicious meal in less than 30 minutes! This recipe consists of penne, broccoli, carrots, and chicken. It's a great way to get those veggies in along with some extra protein. Most of these recipes may not always be the healthiest options around, but they at least all contain some healthy elements. You'll notice that I love pasta, so most of my recipes will more than likely contain carbs of some sort. I apologize in advance for the possible carb overload, but you gotta live a little, and I don't do diets :)
