Cheesy Chicken Fajitas



I realized that I haven't had Mexican food in what seems like years, so I decided to make fajitas! I have to be in the mood for Mexican food, and I'm a wimp when it comes to a lot of spiciness. If you're like me, then you will love these fajitas: They're quick, easy on the spice factor, and delicious! I felt pretty healthy while eating these because of all of the veggies, and I bought whole grain tortillas instead of regular (which you can clearly see I failed at folding). Oh, and chips and salsa is a must!

20-Minute Skillet Chicken & Spinach Parmesan



Annnd I'm back to chicken this week! Surprise surprise. I have actually never experimented with a chicken recipe like this one before, so I was interested in seeing how it would turn out. Turns out, it was really good! I put a little too much spinach on mine (I love spinach, but in salad form rather than cooked) but, if you're a spinach lover, this is probably perfect for you! I also added extra cheese because there's no such thing as too much cheese :)

Beef & Broccoli Stir-Fry




This weekend I decided to try something different. I have never had stir-fry before, but have been told numerous times that I need to try it! And I'm sure glad I did! I'm not a huge ginger fan, so I didn't think I'd like the soy and ginger sauce, but it was actually delicious and pretty mild! This is something easy, yet still fairly healthy, to make during the week if you're somewhat short on time (and if you're craving Asian food!).

Rotel Dip






Cream cheese, sausage and rotel: I know, it may not sound like the most delicious combination you've ever heard of, but I promise that's worth trying! At first I was hesitate to try this dip because the thought of sausage and cream cheese grossed me out. But once I took a bite, I became addicted! This dip is perfect to make for get-togethers (I actually just made this for the Super Bowl)! All you need to do is cook Italian sausage (1 pack) in a skillet, and heat 2 packs of cream cheese in a crock pot. Once they're both heated/cooked, mix everything together (including 1 can of rotel) all in the crock pot. It's that simple! And who doesn't love cream cheese!

Cheesy Beef Stroganoff




I decided to try something that was kind of out of the norm for me: cooking with beef instead of chicken. I'll admit it, there's usually chicken in the majority of my meals (yes, I love chicken), but I decided to switch it up a little. This recipe took even less time than the previous one. Cooking the beef takes the longest, but I was still able to sit down and eat this within 20 minutes! That's pretty dang fast for a delicious meal.
