I don't know about you guys, but I love tuna! And what's better than tuna AND pasta? What seems like a random combination actually makes for a great recipe! The great thing about this casserole is you can really add whatever vegetable you want, or leave them out. The majority of tuna casserole recipes have peas, but I hate peas so I added broccoli instead. Another great thing: you will have leftovers for days! A Lot on Your Plate
As students, we literally have a lot on our plates. School is stressful, and the majority of us would rather spend time doing anything but cooking. We often forget how important it is to make time for a (semi) nutritious meal. I'll admit it, I love cooking and eating healthy foods, but sometimes I only have enough time to grab something quick. (Semi) healthy meals don't have to be time consuming, and I'm here to prove that it's possible regardless of how busy your schedule is.

Strawberry Vanilla Waffles
Breakfast is by far my favorite meal of the day! These are vanilla waffles and (to feel slightly better about myself) I added some strawberries! And, if you don't sprinkle on some powdered sugar, you're doing it all wrong. These waffles only take 15 minutes and are just as good (and probably healthier) as going to IHOP! Garlic Butter Spinach Pasta
I realized that I haven't made pasta in what seems like years, so I decided to test out a new recipe! This recipe literally has all of my favorite ingredients: garlic, spinach, and pasta. It really can't get any more delicious! And it only takes 20 minutes! I sometimes struggle with eating enough vegetables, so this is also an easy way to get some leafy greens in for the day!

Cube Steak & Garlic Parmesan Potatoes
So, I'm not sure if any of you have ever had cube steak, but it's delicious! I'm not a huge steak fan, but I could eat this every night! It could be compared to a tenderloin, but I personally think it's better because of the breading. And you can't ever go wrong with garlic potatoes as a side (I seriously put garlic on everything).
I don't have an exact recipe on how to make a cube steak, but you will need 2-3 eggs, 1tbsp parsley, 1/4 tsp pepper, 1-2 packs of crackers (crushed), and 2tbsp olive oil. Warm up some olive oil in a skillet on medium, dip the steaks in the egg mix (egg+spices), then in the crackers, and put it on a skillet for about 30-40 minutes (flip a lot). Easy as that!

Cream Cheese & Chicken Taquitos
These taquitos were amazing! I had actually never heard of a taquito until I came across this recipe on Pinterest (recipe link here). The tortillas were crispy and the cream cheese filling really melts in your mouth. Instead of making tacos or quesadillas, try this Mexican inspired recipe!

Turkey, Bacon & Avocado Panini
I have finally strayed away from Mexican food for a little while and decided to make a panini! I'm usually not a big sandwich person, but this panini may have converted me. Instead of going to Panera or somewhere to get one, you can actually make your own delicious and nutritious panini (minus the bacon that I didn't use) right in your own kitchen! You can also switch things up a bit: if you prefer ham instead of turkey, or a different cheese - there's a bunch of combinations you can try!

Garlic Parmesan Spinach Orzo
This week I decided to make pasta (it has been a while since I have made some!). I have also been on a spinach kick, so this recipe was perfect. And because there's cheese, of course. I also had never made anything with orzo before, and let me tell you, it was delicious! The awesome thing about this recipe is there's a bunch of leftovers so you won't have to cook for the next few days!
